How to Make Texas Twinkies


By the time you’re done with this recipe, you’ll be happily eating some Texas Twinkies. Just be sure to share a couple with your spouse and kids… or don’t, we don’t like sharing these things.

Before we get started with how to make texas twinkies, you need to have the necessary ingredients. You’re going to need 12 whole jalapeños, 15 T. cream cheese, 1 1/2 lbs. marbled brisket, 12 thick-cut strips of bacon, 2 T. kosher salt, 2 T. coarse-ground pepper, and 6 oz BBQ Sweet Glaze.

A little background story about the origin of these. These “texas twinkies” were originally named at Hutchins BBQ when they realized they basically look like twinkies. The heat and meat-seeking guests at their restaurant in both McKinney and Frisco, Texas love these things and you will too.

How to Make Texas Twinkies

  1. For the brisket: Trim fat off to ¼-inch. Create rub with 60% pepper, 35% salt and 5% cumin or cayenne. Rub the mixture on the brisket; let set in the refrigerator for 2 to 3 hours.
  2. Remove meat and hold at room temperature. Preheat smoker to 220 F. Smoke brisket for 1 hour per pound or until the internal temperature reaches 185 F for firm and 205 F for tender brisket. Use point of brisket, which is marbled, for Texas Twinkies.
  3. Slice one side of jalapeno from stem to tip. Slice across on stem end to represent a “T”. Remove seeds and membranes from jalapeno. Place jalapenos on a baking sheet and bake at 300 F for 10 minutes.
  4. Remove jalapenos and place in a bowl of ice water to extract additional seed oil. Raise oven temperature to 350 F.
  5. Cover bottom of the inside of jalapenos with roughly 1 tablespoon of cream cheese. On top of the cheese, add 2 ounces smoked brisket.
  6. Close jalapeno around stuffing and wrap with bacon. Season with a pinch of salt and pepper. Place jalapenos on a baking sheet at 350 F for about 30 minutes.
  7. To serve, brush each jalapeno about 1 tablespoon of BBQ glaze and serve.

It turns out that at the Hutchins Restaurants, each of these jalapenos has a pretty good amount of meat in them. “There’s close to a quarter pound of meat in each one,” owner Tim Hutchins told an interviewer with TexasMonthly.com

According to our research, Hutchins Restaurants go through about 350 each week from Friday through Sunday, which are the only days they’re actually sold.
